As a stay at home in theory I should have time to make some glamorous 3 course meal every night... but that's not happening! Not with 4 teenage kids who are super active and me being a full time student. So the cure to my cheer/football/baseball/band mom blues has been anything that will make my life less insane.

A non-freezer dish

Mini Chicken Alfredo Shells
24 Dry Jumbo Past Shells
2 Tbsp olive oil
1 lb boneless skinless chicken breast
Sauce:
1 1/2 c heavy cream
2 cloves garlic (again I use tastefully simple)
1 stick butter
1 1/2 c grated parmesan divided
2 tsp black pepper
4 Tbsp chopped parsley divided
Preheat  broiler with rack 5 inches from element
Spray 2 muffin tins with non stick spray
Boil water for shells
 
Cook shells al dente and then drain and rinse under cold water
 
Heat oil over medium heat and saute chicken till cooked through 8-9 mins per side
chop to small pieces
 
Warm cream and garlic in large saucepan over medium heat until steaming
Whisk in butter until melted
add 1 c parmesan, 2 tsp pepper and 2 Tbsp parsley
 
Increase heat to medium - high and simmer until reduced to 1 cup, about 10 mins
Stir in chicken and remove
 
Broil shells until sauce bubbles and parmesan melts and is golden about 2 mins
 
* this was one of our favorite meals EVER ... however it doesn't make for great leftovers
** Also I made several with out chicken
