As a stay at home in theory I should have time to make some glamorous 3 course meal every night... but that's not happening! Not with 4 teenage kids who are super active and me being a full time student. So the cure to my cheer/football/baseball/band mom blues has been anything that will make my life less insane.

Chicken Cordon Bleu Bundles

So for the first day I made these and tossed them right in...
So I kinda cheated today!

Here is the recipe though

7 Boneless Chicken Breast
7 Slices of Ham
7 slices of Swiss Cheese
7 Slices of Bacon
Salt and Pepper to taste
1/4 cup of water
1 tsp of Chicken Bouillon
1/2 cup of Apple Juice
1 tsp of Cornstarch
1/4 cup cold water

Flatten Chicken with mallet to about 1/4 inch thick (if you use perfect portions they are good to go).  Place a slice of ham and a slice of cheese on top of each piece of chicken.  Sprinkle with salt and pepper. Roll up and wrap with strip of bacon and secure with a toothpick. Place into freezer friendly bag!

To cook: Thaw contents of the bag.  Throw into crockpot with a 1/4 cup of water, chicken bouillon, and Apple Juice.  Cook on high for 4 hours.  Combine cornstarch and 1/4 cup water, add to slow cooker and cook till sauce thickens.

MY NOTES: Sauce so did not thicken!  But recipe was great I cooked for 6 hours and it was too long... 5 hours tops or adjust and do on low

Tonight there was just me, Patrick and the boys... So I told them dinners had to be rated on a scale of 1-5stars while I do this

I agree with Patrick

The recipe is AWESOME taste amazing but I did cook about an hour too long... I freak out over chicken and always over cook! 

Tomorrow is Pepper Steak.... It is WAY out of Patricks comfort zone so lets pray he eats it

I will say while it was a little dry the first night I poured a little chicken broth over the left overs and a little more when reheating for lunch and it was AMAZING!

We had this last night. i was cooking it for 4 so it took 3 hours on high. I would cook on low next time because it was a little dry. I am wondering if chicken stock might be good to add. It got rave reviews and will make it again.
